Joe has worked at Crafthouse since August 2013 and in that time has climbed the ranks from Commis Chef
On where it all began: “My first experiences of chef life came when my Aunty gave me a job pot washing in the family’s carvery. One day when they were short I was asked to help out in the kitchen and from then I was hooked. I enrolled at Leeds Thomas Danby college aged 16 to learn properly.”
On working with Exec Chef Lee Murdoch: “Lee introduced me to a new style of cooking with new ingredients. He also taught me that kitchens can be fun whilst maintaining a level of professionalism and how enjoyable it is to be part of a team dedicated to the same goal. His high standards and inventiveness have taught me you can always do better and improve your knowledge and standards, even when you think you’re doing your best, you can be better still”.
On his favourite dish: “Cotte de Bouffe, cooked on the Josper. It’s great because you can share with 2-4 people and it tastes delicious.”
